Recipe: Build A Perfect Salad

I don’t know an.y.thing. about nutrition and so whenever I make a discovery I assume that probably everyone else out there that is even remotely nutritionally focused knows about it. And this is one of those things.

However, I have learned that there are actually quite a lot of “I don’t know an.y.thing. about nutrition” people out there with me. So, if you are a nutrition junkie, feel free to say “Wow – I’m so happy that she has learned this since I have used this trick my entire life!” and if you are a nutrition newbie, then feel free to say, “Wow – I’m so happy that she has learned this since I have never thought of doing that!”

Here ya go.

Build A Perfect Salad

(for two salads)

Ingredients

When choosing your ingredients… think about colors. It’s amazing how easy it is to get a variety of nutrients when you simply vary color. Plus, to me, a pretty salad is always immediately more appetizing than all green. So, if you have a green celery… then choose a bright orange carrot. Or if you have a red tomato, choose a yellow bell pepper to compliment it.

  • 2 large carrots
  • 2 large celery stalks
  • 10-15 salad tomatoes
  • 1/4 cup peanuts, chopped
  • 1 can dark red kidney beans, drained and rinsed
  • fresh oregano (or other herb or optional)
  • feta cheese, optional
  • lettuce
  • salad dressing

Instructions (I put my “commentary” in italics!)

1. Get out your two salad bowls, cutting board, knife, and all your veggies.

2. Start out with chopping up the carrots, celery, and halving the tomatoes. As you go you’ll see how the bowl really fills up with the “good stuff”. If you realize that you’ve got way too much of a particular ingredient just put the extra in a tupperware for tomorrow.

3. Add in your peanuts, kidney beans, oregano, and feta and mix everything together. That’s right… no lettuce yet!Just look at how full your bowl is of all the good roughage with all the good nutrients… too many of our salads are filled with 80% LEAVES because that’s what we put in first… but I think that’s part of the reason that we all get so burned out on them!

4. So, NOW, add your leaves (aka: lettuce) and some dressing.

5. This step is negotiable, but I always chop-mix my salad at this point. I like to do it because it is a good way to really mix everything together, plus I have terrible TMJ and so my bites have to be pretty small. You can chop-mix it by dumping it all out on a cutting board, but that is a mess and a half. Or you can get a good serrated knife (like a steak knife) and a fork and just cut it up a lot. OR, you can do my favorite method and get a pair of these salad choppers which I use for tons of stuff.

Okay, so it’s not like some kind of phenomenal life altering recipe… it’s more of a method. But it’s gotten me to build and eat more substantial salads instead of a bowl full of mainly leaves.

Day 345: Choice Foods

Ya know, it’s one thing for me to say “I’m only gonna eat fruit for snacks from now on.” But it’s another thing entirely for me to actually eat only fruit for snacks.

Cause when it comes down to it- I have to choose fruit instead of a Doritos. I even have to choose fruit over “healthy” things like granola. (Cause even granola isn’t healthy if I’m eating it when I’m not hungry, or eating too much of it.)

And the choice part is where I tend to make-it or break-it. I can hear the rationalizations in my head (well, I can hear them after the fact, at least):

• Ohhhhh, it’s just one.
• I’m in too much of a hurry.
• These taste so much better than fruit.
• This isn’t really a snack, per se, it is sorta like part of my lunch since I only ate, like, 30 minutes ago.

So I was looking into choice-making in scripture and here are a few that I found.

Here’s one that is ever-important to read, but it certainly cuts right to the point…

There is a path before each person that seems right, but it ends in death.Proverbs 14:12

And those Doritos… well, they sure do seeeeeem right. But, well, they will end in death. They will. As much as I hate to admit that to myself… they are bad for my body. bad for my temple. and bad for my relationship with God.

Then there’s the tried and true “fork in the road” verses…

“You can enter God’s Kingdom only through the narrow gate. The highway to hell is broad, and its gate is wide for the many who choose that way. But the gateway to life is very narrow and the road is difficult, and only a few ever find it.Matthew 7:13

And I know these verses are not “about” dieting per se, but the concept is similar. It is sooooo muchhhhh easier to eat Doritos instead of a clementine. But, I want to go through the gateway to LIFE… but it is difficult sometimes. But… I read that again… the. gateway. to. life. What is a Doritos chip compared with that?!?!

And I love/hate these verses. Another in-yo’-face scripture about choosing right.

Don’t be misled—you cannot mock the justice of God. You will always harvest what you plant. Those who live only to satisfy their own sinful nature will harvest decay and death from that sinful nature. But those who live to please the Spirit will harvest everlasting life from the Spirit. So let’s not get tired of doing what is good. At just the right time we will reap a harvest of blessing if we don’t give up.Galatians 6:7-9

And then my favorite to end with… about choosing what to think about…

And now, dear brothers and sisters, one final thing. Fix your thoughts on what is true, and honorable, and right, and pure, and lovely, and admirable. Think about things that are excellent and worthy of praise.Philippians 4:8

Day 232: Granola Girl

Granola. So healthy. So good for you. So yummy.

Sooooooo yummy.

Cause when you haven’t had sugar for 232 days and you taste the sweetness of granola… ooooooooo, it’s just extra yummy.

Have I mentioned yet that it’s yummy?

Well. It is. Yummy.

And that is why I had to limit myself to eating it once a week. It’s not really a covenant thing, but the longer I’m on the covenant the more I realize that I don’t have to covenant everything. I am learning that I have will power through Him all the time. Covenant or no covenant. I think being on the covenant this long as shown me, proven to me, reminded me that with God all things are possible. Even me having willpower. Yes, even that. Which feels like just as much of a miracle as God parting the Red Sea!

Okay but I slid off topic there for a sec. What I was going to say is again a reminder that it isn’t about which food I am eating so much as it is about my approach toward food. Am I being gluttonous? lustful? self-focused? If I am eating granola (mind you… “healthy” granola) with any of those mind sets then it’s gonna backfire. And thinking that some foods can be eaten whenever, with whatever mindset, simply because some nutritionist has deemed them “healthy”… well, it’s just not good.

I can’t remember if I have shared this scripture before or not and since I’m blogging outside on my phone while my toddler plays then I can’t look up to see if I have, but oh well either way! I’m sure it isn’t the first time for me to repeat myself! Ha!

So do not be attracted by strange, new ideas. Your strength comes from God’s grace, not from rules about food, which don’t help those who follow them.Hebrews 13:9
